Cheese 1: Stinking Bishop - Soft (Cow). A soft textured washed rind cheese that develops a distinctive, meaty pungency with age. The name of the cheese is derived from the variety of pear “Stinking Bishop”, the juice of which is made into a “perry” and is used to wash the cheese. This gives the cheese its distinctive nose. The cheese should be the texture of thick clotted cream but on occasions is spoonable rather than sliceable!. Vegetarian.
Cheese 2: Sheep Rustler - Semi-Hard (Sheep). Supreme Champion at the 2018 British Cheese Awards, a Semi-Hard, ewes’ milk cheese with a warm, nutty, lingering flavour with a hint of sweetness. Vegetarian
Cheese 3: Cornish Yarg Nettle - Firm (Cow). A young fresh cheese with a gentle citrus flavour. The texture is soft just under the rind but it is firm and slightly crumbly at the core. The nettles don’t bring a huge amount of flavour, but there is a lovely elusive green sappiness about the cheese. Vegetarian.
Cheese 4: Oxford Blue - Blue (Cow). A British cheese to rival Dolcelatte and Gorgonzola, Oxford Blue is a moist creamy cows’ milk cheese that has an aromatic finish. Not as spicy as Stilton with a softer, more giving texture, the cheese has a comforting, mellow quality that has made it popular with people who find stronger blues too much. Vegetarian.
Cheese 5: Black Bomber Cheddar - Hard (Cow). Where Cheddar’s are concerned, our multi-award winning Black Bomber® is a modern classic. Our flagship cheese marries a delicious rich flavour with a smooth creaminess, lasting long on the palate but remaining demandingly moreish!
Black Bomber® has won awards at The Great British Cheese Awards, Nantwich International Cheese Awards and the World Cheese Awards. Vegetarian.
Cheese 6: Waterloo - Soft (Cow). Waterloo cheese is soft, rich and buttery like a hollandaise sauce, but with a lactic finish emanating from its centre. The milk now comes from a single herd of Guernsey cows near Henley. Anne and Andy wash the curds for this cheese to lower the acidity, which gives it a gentle, sweet flavour. Vegetarian.
