Vineyard: Quinta do Crasto's grape growing techniques are based on strong ecological methods. No products or substances that have not been approved by national or international regulatory entities are used, ensuring a total respect for the environment and keeping the vines in their cultural landscape. Crasto are concerned about and respect the identity of our Old Vines (a hundred-year-old vines). In this sense, Crasto are creating the genetic map for our vineyard to guarantee its genetic identity in the future. Crasto also give priority to the vineyard modernization that is compatible with the preservation of the natural vegetation. We are committed to protecting the region´s fauna, landscape and soils, but above all, to ensure that we preserve the Douro´s biodiversity,
Vinification: The grapes, from Old Vines were transported in small plastic boxes and subjected to rigorous screening the winery entrance, after a soft crushing without destemming, were sent to a traditional mill where they were trampled by men at regular intervals. After a short initial fermentation, grape brandy is added to stop the fermentation. The wine is then aged in large oak casks for around 18 years until it is bottled.
